Seasoned pork chops grilled and slathered in a to-die-for fig jam, dijon mustard barbecue sauce. My goodness these are so juicy and delicious with the perfect sweet and tangy, slightly sticky sauce. Wow so good!
INGREDIENTS – serves 2
2-1″ pork chops, boneless
1/4t salt
1/4t black pepper
1/4t garlic powder
1/4t onion powder
1/4t smoked paprika
1/8t chili powder
Dash of cayenne, to taste
1T fig jam
1T dijon mustard
2T barbecue sauce
INSTRUCTIONS
Pat pork chops dry with a paper towel. In a small bowl, stir together salt, black pepper, garlic powder, onion powder, smoked paprika, chili powder and cayenne. Sprinkle half on one side of the chops, use your hand to spread it out and make sure that side is coated then flip over and do the same with the remaining seasoning. Let sit for 15-30 minutes.
Meanwhile, stir together the fig jam, dijon and bbq sauce.
Get your grill hot then reduce the temp to medium-med-high. Grill the chops with the lid closed for 3-4 minutes, give them a flip then slather the cooked side with the fig dijon bbq sauce, close the lid for another 3-4 minutes. Flip, slather, cook 3 minutes then flip one last time and cook for 3 minutes. Allow to rest for about minutes before serving.
