QUICK ZUCCHINI + TURKEY RAGU PASTA

Fast and delicious! Sautéed zucchini, shallots and ground turkey with lots of herbs and spices, simmered in a simple tomato sauce, then tossed with fresh pasta and parmesan. A perfect busy weeknight meal. You’re gonna love it!

INGREDIENTS – serves 2-3

1/2 box pasta
2T olive oil or butter
1 small shallot, chopped
1 medium zucchini, chopped (or 1/2 large)
1/2lb ground turkey (any ground meat)
1/4t salt
1/4t black pepper
1/4t garlic powder
1/4t thyme
1/4t basil
1/4t oregano
1/8-1/4t red pepper flakes
2T tomato paste
1/2c leftover pasta water
1/4c parmesan, grated

INSTRUCTIONS

Cook pasta to package instructions in salted water, reserving 1/2c pasta water before dumping it.

Saute shallot and zucchini in olive oil on med-high heat for about 2 minutes. Add turkey, salt, black pepper, garlic powder, thyme, basil, oregano and red pepper flakes. Stir, breaking up the turkey until the meat is cooked through. Make a little space in the middle of the pan and add the tomato paste, stir it in, coating the turkey and zucchini and let it cook for a couple of minutes. Turn off the heat, pour in the reserved pasta water, stir and let it simmer for about 30 seconds then dump in the cooked pasta, and parmesan. Toss to coat until everything has melted together into a luscious sauce. Top with some extra parmesan.
