LEMON GINGERSNAPS

A classic molassesy cookie flavored with lots of ground ginger and lemon zest. Chewy with just a little crunch on the outside. A summery twist on my favorite cookies. So delicious.

INGREDIENTS – makes 30-40 cookies

3/4c butter, room temp
1 1/4c sugar (separated 1c + 1/4c)

1/4c molasses
1 egg, room temp
1/2t vanilla extract
2 lemons, zested

2c flour
2t baking soda
1/4t salt
1 1/2t ground ginger

INSTRUCTIONS

Preheat oven to 375ºF.

Cream butter and 1c sugar until light and fluffy. Add molasses, egg, vanilla and lemon zest and continue to beat until its super whipped and fluffy. Sift in flour, baking soda, salt and ginger then stir to combine. Using a small cookie scoop (1T), scoop some dough, roll it between your hands to smooth it into a ball then roll it through the remaining 1/4c of sugar. Place on a parchment lined baking sheet 2-3″ apart then bake for about 8 minutes.
