Fresh, delicious and super hydrating! Crisp iceberg lettuce with sliced strawberries, cool cucumbers and creamy mozzarella balls over the top with a drizzle of tangy-sweet balsamic dressing. Absolutely perfect for summer.
INGREDIENTS – serves 2-4
1 head iceberg lettuce, cored removed and 1/8’d
6-8 strawberries, sliced
1 Persian cucumber, halved and sliced (or 1/2 reg cucumber)
4 oz fresh mozzarella (I used halved mini balls but any cut up fresh mozzarella will do)
1T strawberry jam (or other jam, honey or maple)
2T balsamic
3T olive oil
INSTRUCTIONS
Distribute your iceberg over a large plate then top with strawberries, cucumber and mozzarella.
In a small bowl, whisk together jam, balsamic and olive oil with a pinch of salt and pepper. Drizzle over the salad and serve.
