Fresh broccoli florets sautéed in butter with lemon zest, lots of black pepper and garlic then finished with lemon juice and tossed with pasta and mini mozzarella balls. Such a quick, easy and delicious meal!
INGREDIENTS
1/2-16oz pkg pasta
2-3T butter or olive oil
2 head of broccoli, florets
1 lemon, zested and juiced
1/2t black pepper
2 garlic cloves, grated
1/4t salt
2-3 fresh thyme sprigs, stems removed (or 1/4t dried thyme)
1/3c reserved pasta water
1/4c parmesan, grated
4oz mini mozzarella balls
INSTRUCTIONS
Bring a med-large pot of salted water to boil. Cook pasta to package instructions, strain (reserving 1/3c pasta water) and set aside.
Melt your butter in a large skillet on med-high heat. Add the broccoli, lemon zest, black pepper, garlic, salt and thyme. Cook for 2 minutes, stirring occasionally. Squeeze in the lemon juice, stir, then turn off the heat. Pour in the pasta water, dump in the pasta then sprinkle the parmesan on top. Toss everything together until the parmesan has melted into the sauce. Stir in the mozzarella then serve.
