A perfect summer salad. Juicy grilled peaches and corn, creamy avocado, crunchy sunflower seeds and a touch of red onion for a little bite. So fresh and delicious.
INGREDIENTS – serves 1-2
2 peaches, halved
1 corn cob, husk removed
1/2t dijon
1t honey
2T balsamic
3T olive oil
4-6c fresh greens
2-3 slices red onion
1/2 avocado, sliced or cubed
1-2T sunflower seeds, toasted
INSTRUCTIONS
Bring a grill up to medium heat. Lightly brush some oil on the peaches then grill the corn and peaches until charred. Cut the corn off the cob and slice the peaches.
Add dijon, honey, balsamic and olive oil with a pinch of salt and pepper to a jar, secure the lid and shake until combined. Pour over green and toss to coat. Top with corn, peaches, red onion, avocado and sunflower seeds.
