Crunchy coconut, oats and almonds toasted up with just a touch of sweet honey, lime and allspice. A flavorful and delicious twist on a classic breakfast favorite.
INGREDIENTS – makes 4-5c
2 1/2c rolled oats
1 1/2c shredded coconut, unsweetened
1c almonds, sliced
1/4c coconut oil
1/2c honey
1 lime, zested
1/8t allspice
INSTRUCTIONS
Preheat oven to 325°F.
In a large bowl, stir oats, coconut and almonds together. Add oil, honey, lime zest, allspice and a pinch of salt to a small sauce pan and begin to warm it until the oil melts and the honey is thinner and easier to work with. Pour over the oat mixture and stir to coat. Dump onto a parchment lined baking sheet, spread everything out evenly. Bake for 15 minutes, stir, bake for another 15 minutes, stir then finish off for another 5-10 minutes. Allow to cool then store in an airtight container.
