Fresh greens tossed in a light white balsamic vinaigrette over a smear of whipped ricotta, topped with thinly sliced pears and finished with chopped chives and toasted almonds. So perfectly balanced and flavorful.
INGREDIENTS – serves 1-2
1/2c ricotta
2T white balsamic vinegar
1T olive oil
4-6c fresh greens
1/2 pear, cored and sliced as thin as you can
1T chives
2T toasted almond slices
INSTRUCTIONS
Using a small food processor or immersion blender, whip the ricotta until smooth.
In a small bowl, whisk together vinegar and olive oil with a pinch of salt and pepper then pour over the greens and toss to coat.
Smear some whipped ricotta on the bottom of the serving dish, top with the dressed greens, wedge in some pear slices then sprinkle with chives and almonds.
