PEACH PANZANELLA

Fresh juicy peaches, hydrating cucumber and crispy croutons tossed in a light lemon-thyme dressing. Such a delicious and bright summer salad. You’re going to love it!

INGREDIENTS – serves 2-4

2 – 1″ slices bread, cubed (I love using sourdough)
2T olive oil
1/8t garlic powder

1/2t fresh thyme
1T honey
1/2 lemon, juiced
3T olive oil

2 peaches, cubed
1/2 cucumber, cubed
1 small shallot, sliced

INSTRUCTION

Preheat oven to 400°F. Toss bread cubes in 2T olive oil, garlic powder and a pinch of salt. Toast for 4-8 minutes until they’re nice and crunchy croutons.

Meanwhile, in a large bowl, whisk together thyme, honey, lemon juice and olive oil with a little pinch of salt. Add peaches, cucumbers, shallot and croutons, toss to coat.
