GARLIC MARSALA MUSHROOMS

Talk about a flavor bomb! Rich + savory shitake mushrooms, loaded with garlic + fresh thyme, deglazed with a splash of sweet marsala wine and a dash of tangy balsamic vinegar. A simple recipe that is filled with so much flavor.

INGREDIENTS – serves 2

2T butter
12-15 shitake mushrooms, 1/4″ slice (or crimini)
3-4 sprigs or thyme or 1/4t dried
3-4 garlic cloves, minced
1/4c marsala wine
1/4c broth
1/2t balsamic vinegar

INSTRUCTIONS

Melt butter in a large skillet at med-high heat. Saute mushrooms until they start to turn golden brown (5-6 minutes), add garlic + thyme and cook for another minute. Deglaze with the marsala, scraping any bits off the bottom of the pan then pour in the broth + balsamic. Reduce to a simmer, stirring occasionally until the sauce has thickened and get mostly absorbed by the shrooms.

I like to serve this over grains, mashed potatoes or polenta.
