Quick + easy is a must in the mornings not because I'm in a rush to get out the door, I'm just freaking hungry. These roasted potatoes are seriously the best because I can throw them together in minutes then just set the timer and enjoy that coffee! They're a little spicy + salty with just a hint of smoke. SO DELICIOUS!
Do something with those leftover bananas that isn't banana bread! These bananas turn into PURE sweetness, making the PERFECT topping to some delicious coconutty oats. I like to serve this with a big scoop of greek yogurt, a smaller scoop of almond butter and sprinkle with some toasted coconut and hemp seeds for some extra healthy protein, fat and fiber.
