Quick + easy is a must in the mornings not because I'm in a rush to get out the door, I'm just freaking hungry. These roasted potatoes are seriously the best because I can throw them together in minutes then just set the timer and enjoy that coffee! They're a little spicy + salty with just a hint of smoke. SO DELICIOUS!

The natural sweetness of golden beets is elegantly balanced out with tangy apple cider vinegar, savory thyme, and a pinch of red pepper flakes. These are the perfect side to any meal, look incredible on a charcuterie board or taste amazing on some simple avocado toast! Such a great healthy addition!
