Salty, sweet, herby, lemony, savory, DELICIOUS. Use whatever stone fruit look good where you live and whip up this ultra satisfying meal in less than 30 minutes!


1c farro, dry
2c broth/water
1/4c pesto (I used my recipe here with 1/3 basil, mint and chives instead of just basil)

1T butter
1-2T olive oil
1/2 package of halloumi, sliced thin
2 stone fruits (I used a white nectarine and a yellow peach but use whats fresh/on hand)
1 shallot, sliced
1/4t thyme
1t honey

Basil, torn – optional


Cook farro in broth/water with a small pinch of salt, 12-15 minutes. Let cool a bit then toss in pesto.

Bring a large skillet to med-high. Add butter and olive oil then fry the halloumi about 2 minutes per side. Remove to a towel to drain. Saute the stone fruit and shallots with a little salt and pepper and the thyme. Cook for 3-4 minutes until soft, turn off the heat then drizzle the honey over and stir in.

Top farro with the stone fruit and halloumi then sprinkle with torn basil.
